Inspired by Los Olivos, Made With Heart: Chef Brett’s Fall Menus

Pure Meal Prep began with a love of food and a belief that eating well should be one of the most enjoyable parts of your day.

We wanted to create meals that people would look forward to. Meals with thoughtful ingredients, beautiful sauces, and flavors that make you pause after the first bite. Food that fits into a busy life while still giving you a moment to sit down, enjoy yourself, and feel cared for.

That belief continues to guide us as we grow. And this week’s fall menu is a beautiful expression of it.

Bringing a Little of Los Olivos Home

During our recent trip to Los Olivos in California’s Central Coast, Brett found inspiration in the slower pace, the local farmers’ seasonal offerings, and the meals we enjoyed together.

Travel gives us a chance to step outside our everyday routines and experience food with fresh eyes. We get to sit on the other side of the table, appreciate someone else’s creativity, and talk about the flavors that stay with us long after a meal ends.

For Brett, those experiences often become the beginning of a new dish.

This trip brought fall into focus: the sweetness of figs and pears, the richness of mushrooms, the fragrance of rosemary and thyme, and the brightness of pomegranate. Ingredients with warmth and depth that invite you to settle in and enjoy the season.

He came home excited to bring those ideas into our kitchen and share them with our customers across San Diego County.

A Fall Menu Worth Looking Forward To

Brett builds each dish by thinking about how every element will work together. A tender protein needs the right foundation. A creamy side benefits from something fresh or bright. A sauce should bring the meal together and give you a reason to enjoy that last bite.

This week’s menu reflects that attention from start to finish.

Fig Balsamic Short Rib brings the comfort of rosemary and thyme-braised beef together with silky confit garlic potato purée and seasonal vegetables. A fig-balsamic and red wine gastrique adds richness, sweetness, and a touch of acidity to balance the dish.

Pear & Gorgonzola Jidori Chicken pairs thyme-marinated grilled chicken with caramelized fennel and Parmesan risotto, roasted carrots, and a roasted pear-Gorgonzola cream sauce. It’s a combination of savory, sweet, and creamy flavors that feels especially fitting for fall.

Black Garlic & Mushroom Pork Chop leans into the season’s earthy flavors, with wild mushroom and sage farro, roasted Brussels sprouts, and a black garlic-Madeira demi-glace.

Lemon White Miso Salmon offers a different kind of comfort: herb-roasted salmon over creamy roasted chestnut and garlic orecchiette, with caramelized leeks and wilted Tuscan kale. A roasted lemon-white miso cream sauce brings brightness and savory depth.

Smoked Paprika & Pomegranate Chicken balances the warmth of smoked paprika and garlic with roasted lemon-herb potatoes and seasonal vegetables. The finishing pomegranate-shallot agrodolce gives it a sweet-tart lift that makes the whole plate come alive.

Our Keto meal plan receives the same thoughtful treatment, with sides such as roasted garlic and celery root purée, caramelized fennel and

Parmesan cauliflower risotto, sage-roasted spaghetti squash, creamy hearts of palm noodles, and rosemary-roasted turnips.

We want every customer to open their meal and feel excited about what’s inside.

Why a New Menu Every Week Matters to Us

As Pure Meal Prep has grown, the work behind each weekly menu has grown with it.

Preparing thousands of meals for customers throughout San Diego County requires careful coordination. Every new dish brings ingredient orders, preparation plans, cooking schedules, packaging details, and conversations across our team.

Brett meets with our food suppliers weekly, and one suggestion comes up often: keep a set menu for several weeks, or build a rotation that repeats.

We understand the reasoning. A predictable menu makes purchasing, organization, and costs easier to manage. There are practical advantages, especially at the volume we now prepare.

But creating new menus is something Brett cares deeply about.

It keeps him curious. It gives our kitchen room to create. And it gives our customers something new to look forward to each week.

We know how easily eating well can start to feel repetitive. When you’re busy, tired, or juggling a full schedule, having a meal you’re excited to eat can make a meaningful difference. We want opening the weekly menu to feel like discovering your next favorite dish.

That creativity was part of Pure Meal Prep from the beginning. As we grow, we want to keep making room for it.

Healthy Eating Should Be Full of Flavor

We believe San Diego deserves crave-worthy meals that are both nourishing and delicious.

Our customers shouldn’t have to settle for the same plain protein and predictable side every day to make eating well more convenient. There is room for variety, thoughtful cooking, and sauces that make a meal memorable.

That is where Brett’s love for food comes through most clearly.

He enjoys the details: the depth of a braise, the sweetness that develops when vegetables caramelize, the way herbs change a dish, and the balance a well-made sauce brings to the plate.

Those details take time. They require quality ingredients, extra preparation, and a team willing to put care into each step. We choose to invest in them because they shape the experience you have at home.

We want mealtime to be a small event of its own—even when your dinner starts with a few minutes in the microwave.

The People Behind Every Meal

Brett’s menu is the starting point, but bringing it to life takes our whole team.

Our kitchen team turns those ideas into meals through careful preparation and cooking. Our packaging team helps get each order organized and ready. Our drivers carry that work across San Diego County. And our customer service team is there to answer questions and help our customers feel supported.

We’re proud of the people who make Pure Meal Prep what it is.

Each person contributes to the experience, and we want that experience to feel personal. We want you to know there are people behind your order who care about the food, the details, and the service you receive.

That sense of care is part of our brand just as much as the menu itself.

Growing With the Same Heart

Pure Meal Prep has come a long way since we started in 2018, and we’re grateful for every customer who has helped us get here.

Growth has brought new challenges and bigger responsibilities. It has also given us the opportunity to share our food with more people and build a team we’re proud of.

Through it all, our purpose remains rooted in the same things: a love of food, a commitment to quality, and the desire to help people enjoy eating well.

Our fall menus bring those values together. It carries inspiration from a trip we shared, flavors Brett was excited to explore, and the effort of a team that cares about what arrives at your door.

We can’t wait for you to taste it.
